Yooper Campfire Whitefish

Ingredients
- 1 Tomato
- 1 Yellow Onion
- 1 Green Pepper
- 1 TBLS Dried Basil
- 1 TBLS Dried Tarragon
- 1 TBLS Lemon Juice
- 1 C Mayonaise
- 2-- 8-10 oz Great LAkes Whitefish Filets

Directions
Take the filets skin side down and lay them on 2 pieces of non stick sprayed aluminum foil fold the foil up tp the edge of the fish with a 1 inch border. Take the Mayo, Lemon Juice, Tarragon and Basil and mix, should be creamier then regular mayonaise if needed add more lemon juice. Spread mixture onto the whitefish filets. Take the Pepper and onion and julian cut them and sauteed till tender and crisp and then dice the tomato and warm with peppers and onions. Meanwhile you have either cooked the whitefish on the grill, oven or campfire. Anyone will work, remember when the fish starts to seperate its actually over done so check it during cooking. Top the fish with peppers, onions and tomatoes Enjoy!
