Smoked sturgeon

Ingredients
- salt (if needed)
- sturgeon
- pepper (if needed)

Directions
cut the sturgeon into thin strips (if sturgeon is large). if sturgeon is small, cut into two main strips with strips connecting at the tail end. Leave the skin on.
make an outside fire.
make smoking racks held up by poles at each end
wait until fire is burning low
place strips of sturgeon on the racks over the low fire. Smoke until cooked for about one/two hours, (depending on the thickness of fish). Turn over on each side at least once. Watch carefully so strips do not fall into fire.
