Ingredients
- Fresh ground sheep heart (ground beef like consistency)
- Pinch of paparika and/or cheyenne pepper
- Fresh ground sheep lungs w/ windpipe (ground beef like consistency)
- 1 can of green beans (drained)
- Fresh ground or chopped sheep liver (ground beef like consistency)
- 1 can of sweet corn (drained)
- 1 cup fine diced or julienne carrots
- 1 1/2 cup fine diced or julienne potatoes
- 1 Tbsp cooking oil
- Optional ingredients use any or all:
- 1 large apple, peeled and diced fine .
|
Directions
Utilizing a hand operated meat grinder or other type of grinder, grind the heart, lungs with windpipe and liver to get a ground beef like consistency. Mix the 3 meat products together well.
Dice or julienne carrots and potatoes into very fine pieces, (1/8" x 1/8").
Add cooking oil to the cooking pan and heat on medium, add meat mixture and vegetable/fruit mixture to heated oil and cook until meat is thoroughly cooked, covering if needed.
Stir constantly so meat will not stick to the pan and burn. Lower heat and cover until all vegetables/fruit are evenly cooked.
Add seasonings for taste and color, add optional canned vegetables and heat on low.
Note: Serve immediately with fresh homemade tortillas.
You may add a can of strained green beans and/or corn to the mixture if desired. But the recipe above is just as good on its own.
