Ingredients
- Can Salmon, 1lb (Sockeye is best, but it stretches humpie well)
- *Optional*
- 1 egg
- 2 tbsp minced pimento
- Any spice you like that goes with fish
- 3 tbsp diced Chives
- pinch of pepper (Or to taste)
- Corn meal substitute for flour
- 1/3 cup fine diced
- 1/4 cup bread crumbs
- Salt if you like, to taste
- 1/2 cup flour

Directions
In a bowl, combine fish, egg, onion, bread crumbs, spices. Pimentos or chives if you like.
Dig in and mix well, measure mixture into 1/4-1/2 cup portions depending on your preference. Flatten to a patty no thicker than 3/4 inch. Spread flour/corn meal onto a plate, and coat patty on both sides, and fry in hot oil until golden, this doesn\'t take long because the salmon is already cooked out of the can.
Searve with rice, and your favorite garden greens.
