Stuffed Salmon - Tahitian Style

Ingredients

  • 5 slices of bacon, cut into small pieces
  • 2 stalks of celery, sliced small
  • 1 small onion
  • 2 c. Cooked white rice
  • 1 sockeye salmon
  • 2 tsp. Canola oil
  • 2 tsp. Curry
  • Salt and pepper to taste

Directions

In a large skillet, fry celery, bacon, and onion up in the canola oil until bacon is cooked. Adding curry into mixture once done.
Add rice and mix well, adding salt and pepper to taste.
Stuff cleaned cavity of salmon with ingredients.
Wrap in heavy duty tin foil and cook in the oven at 375 for 35-45 minutes. Check salmon at thickest part to see if it is cooked.
